These waffles are sweet, spicy, and fluffy! I made these for brunch during the holidays and they were the best waffles ever! You can swap the nog for some non-dairy milk and omit the spices if you just want vanilla waffles.
Ingredients
1/4 cup sugar
2 Eggcitables eggs (1/4 cup original mix + 1/4 cup water)
1/3 cup veggie oil
1 teaspoon vanilla
1 cup white rice flour
1/2 cup brown rice flour
1/2 cup tapioca starch
1 teaspoon xanthan gum
1 tablespoon baking powder
dash salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/8 teaspoon cloves
1 cup vegan nog (I used So Delicious brand)
3/4 cup water
-Whisk the sugar, "eggs", oil, and vanilla together in a bowl. Set aside.
-In a large bowl, add all the dry ingredients and mix them up.
-Add the sugar/egg/oil/vanilla mix to the dry ingredients and mix.
-Then add the nog and water and thoroughly mix the batter.
-Preheat your waffle iron and brush/spray with oil if it's not non-stick.
-Add batter and close waffle iron, let cook. (My waffle iron holds about 1/2 cup of batter at a time and takes about 6-7 minutes each. This recipe makes about 6 large waffles for me.)
-If you try pulling the iron open and the waffle starts splitting, it's not thoroughly cooked yet.
Wait a few more minutes and try again.
-Top with syrup, chocolate, fresh fruit, or whatever else you please! I used some Nuts For Butter. It’s my absolute fave!
