Easy Oat Flour Pancakes

This recipe is only 3 ingredients and super delicious! I've never had such fluffy gluten free pancakes. Watch me make them here!



Ingredients (makes 6 small pancakes)

2 cups rolled oats

1 teaspoon baking powder

1 to 1 and 1/2 cups water or non-dairy milk

sprinkle of cinnamon or splash of vanilla (optional)

oil for cooking


-Blend your oats up in a high speed blender until you have oat flour.

-Add oat flour to a bowl and mix in baking powder (and cinnamon, if using).

-Start by adding 3/4 cup of your liquid until you have a consistency you like. As the batter sits, it will thicken so you'll need to mix in a splash more liquid every once in a while.

-Heat a pan at medium/medium-low heat with some oil.

-Once hot, add 1/3 cup of batter. Cook for about 4 minutes on the first side, flip and cook for 3 more minutes. You may need to turn the heat down a bit more to prevent burning.

-Serve with vegan butter, syrup, berries, whatever you'd like!



Notes:

-You can add some sweetener to the batter if you'd like, but I prefer to have the sweetness just come from the maple syrup I add after cooking.

-You could also add blueberries or chocolate chips to the batter. Heck, you could even make savoury pancakes with the base recipe and add in some fresh herbs and onion/garlic.

-I always use rolled oats, but I'd imagine quick oats would work too. If you try it, let me know!
