Vegan cottage cheese?! Made from sunflower seeds? You read that right! I just made this in my latest test kitchen video HERE! I wanted to make a vegan cottage cheese that I’d actually like since all the recipes I found online used tofu. Such a nostalgic food for me!
Ingredients
1 and 1/2 cups sunflower seeds
1/2 teaspoon baking soda
2 teaspoons apple cider vinegar
1 teaspoon lemon juice
1 tablespoon nutritional yeast
1/4-1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 cup water or unsweetened soy/cashew milk
-Add sunflower seeds and baking soda to a pot with water. Bring to a boil.
-Once boiling, turn down to just over medium heat, simmer with the lid off for 35-45 minutes or until seeds are soft like chunks in cottage cheese. Check every 10/15 minutes to make sure you don’t run out of water.
-Drain and rinse sunflower seeds under cold water using a mesh strainer.
-Add a little under half of your seeds to the blender with the rest of the ingredients. Blend until smooth.
-Mix cheese sauce with the rest of the sunflower seeds.
-Refrigerate. Serve with fruit, mix in herbs, use for lasagna, etc.
