Refried Beans

I've been making my own refried beans for quite some time now. They're easy to make, much cheaper than store bought, and delicious! I like to add a bunch of chopped jalapeños to my refried beans to make them spicy.



Ingredients


3 cups pinto beans

1 tablespoon vegetable oil

1 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

1/2 cup water

1 tablespoon lime juice (lemon juice works too)

1 tablespoon coconut oil (optional)

1/4 cup chopped jalapeños (optional)

salt to taste (use less if your beans were salted)



-Add oil to a large pan on medium heat, add beans and fry for 5 minutes.

-Add spices (except salt) and water. Simmer for about 10 minutes or until most of the water is gone.

-Mash up the beans with a potato masher or the back of a wooden spoon.

-Add lime juice and optional coconut oil and jalapeños.

-Turn off heat and mix everything together.

-Add salt to taste.



Notes:

You can use canned beans or cook beans from scratch, that will just take longer and need to be planned in advance!
