It's day who knows what of self-isolation and I've had to be very creative with the food I have available. I was out of my KD style cheese powder and also have no non-dairy milk at the moment, so I came up with this even easier mac n cheese recipe!
1lb pasta (save the water after cooking)
3 tablespoons nutritional yeast
1 & 1/2 teaspoons garlic powder
1 & 1/2 teaspoons onion powder
1 teaspoon turmeric
1 teaspoon smoked paprika (or regular paprika)
1/2 teaspoon salt (or just add to taste)
1 tablespoon lemon juice
1 teaspoon mustard
3 tablespoons vegan butter
2 tablespoons vegan mayo (optional)
black pepper for garnish
-Cook the pasta according to package directions, be sure to salt your water.
-Save 2 cups of the salty, starchy pasta water before draining.
-Add noodles and 1 cup of the starchy pasta water to a large pan or pot.
-Next add in the garlic, onion, turmeric, paprika, salt, lemon juice, mustard, and vegan butter. Mix it all up. Adjust seasonings to your liking and add in more starchy pasta water if necessary.
-Optional, but delicious step to give your mac some extra creaminess: add a little bit of vegan mayo.
-Serve, garnish with black pepper (or cayenne pepper if you like spice), and enjoy!
