Easy Chili

This chili recipe is an easy and quick one I whipped up one day. I wanted a comforting meal with little effort. Watch me make it here!


1 tablespoon oil

1 onion

1 carrot

3-4 cloves garlic

28oz can diced tomatoes

2 19oz cans mixed beans, salted

1 & 1/2 tablespoons chili powder

1/2 tablespoon cumin

1/2 teaspoon cayenne

1/2 teaspoon smoked paprika

1 cup veggie broth or water (I used water and 1/2 teaspoon mushroom seasoning)

-Chop your onion, carrot, and garlic.

-Add oil to a large pot and turn to medium heat. Add onions and carrots and cook for 5 minutes. Add garlic and cook for 2-3 more minutes.

-Blend up half your can of diced tomatoes.

-Add the blended and non blended diced tomatoes to the pot as well as the two cans of beans, liquid and all. Mix everything.

-Add all the spices and veggie broth/water. Mix it all up.

-Turn down and let it simmer for 35-45 minutes.

-Garnish with chives and/or vegan sour cream and enjoy!
