Broccoli Cheddar Soup

This broccoli cheddar soup is so creamy, delicious, and tastes just like the stuff I ate growing up! You can watch me make it in my recipe video here.



Ingredients

4 tablespoons vegan margarine or butter

1/2 tablespoon chopped garlic, ~2 cloves

6 tablespoons brown rice flour

5 cups veggie broth

1/3 cup vegan cream cheese

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional)

1 teaspoon onion powder

Salt to taste

3 cups broccoli, chopped up nice and small

1 cup shredded vegan cheddar cheese (I actually used this marble cheese I made)


-Add margarine and garlic to a pot on medium heat. Melt the margarine and let the garlic fry for a couple minutes.

-Start adding in flour 1 tablespoon at a time and whisking it in to create a roux.

-Slowly start adding in the veggie broth, whisking constantly.

-Add the vegan cream cheese and whisk until it’s incorporated.

-Add in the black pepper, cayenne pepper, onion powder, and salt. Whisk them all in.

-Turn the heat to just above medium and let it simmer for 15-20 minutes, whisking frequently.

-Add in the broccoli. Let it simmer for another 10-20 minutes, whisking frequently.

-Turn the heat down to medium-low and add your shredded cheese, save a little bit of cheese to put on top.

-Turn heat off and continue mixing until cheese is melted and nicely incorporated.

-Serve with some shredded cheese and enjoy!
